Breakfast Quinoa, Banana, and Chocolate Chip Bake

I normally have a very predictable breakfast routine…Greek yogurt with berries. This morning however, I had some extra time and I felt like shaking things up a bit. So I looked through my saved recipes on my computer and selected one that I’ve been dying to try. It’s delicious, healthy, and extremely simple! One note though, it does take a very long time to make, so either make it on a leisurely morning, or make it when you have time, then save it in the fridge for a quick ready breakfast. Without further discussion, here is the recipe for a wonderful Quinoa, Banana, and Chocolate Chip Bake!


3/4 of a cup of Quinoa

1 Egg

3 Tablespoons Almond Milk

1/4 Teaspoon Vanilla

A Dash of Cinnamon

A Dash of Salt

3 Tablespoons Maple Syrup

1 Banana, Mashed

3 Tablespoons Chocolate Chips


Preheat oven to 375 degrees


Cook Quinoa in a rice maker (or on the stove if you feel comfortable) with a dash of salt. Remove lid and spoon quinoa into a large mixing bowl. Let cool.


In a medium bowl, whisk together eggs, almond milk, vanilla, cinnamon and maple syrup.

Add to quinoa and mix well. Gently stir in mashed bananas and chocolate chips.


Spoon into individual baking dishes or one large baking dish

Bake for 45-60 minutes until breakfast bake is set
